Dragos Petrescu, City Grill owner who got the master-franchise for Germany's BackWerk bakery network, is set to open the first such shop next month in Universitate area of Bucharest, on the site of the former Depozitul de Calculatoare, in the wake of investments worth 150,000 euros. "It will be a discounter-type bakery, with the self-service concept cutting at least personnel expenses. For the beginning, we'll import everything, starting with equipment to packaging, but we'll be looking for local partners to reduce development costs to around 100,000 euros per shop," stated Daniel Mischie, Petrescu's partner in Trotter Consulting, which holds the master-franchise for BackWerk. Besides the main supplier, DeliFrance, which is present in Romania only on the hotel-restaurant-catering segment with patisserie product imports, BackWerk has also signed partnerships for the supply of ready-to-cook products with AnaPan, a company owned by businessman George Copos and with Can Serv, the business of Ion Avram, who controls Primavara supermarkets and a bakery. As for beverages, the suppliers are Lavazza and Pepsi.
